This Junmai Ginjo sake is made entirely from the rare sake rice "Aiyama," both for the koji rice and the rice used for the sake. After pressing, it is bottled with only one pasteurization. It has the vivid, rich flavour that is characteristic of "Aiyama," as well as a well-balanced acidity.

This sake is made using excellent sake-brewing rice, and has a refreshing aroma, a bright acidity and umami that enhances food (especially fish dishes). It has a refreshing taste that comes from the raw rice, and the aroma and flavour become even more pronounced when chilled. The label features a swordfish. "Sui Shigen" comes from the Chinese proverb "Drinking water, thinking of its source." It means that "those who drink water should think of its source," meaning that "they should not forget and cherish the basics and roots of all things." As sake brewers, Dewatsuru brewed this sake with an awareness of the importance of the natural environment and resources that nurture it. It is directly bottled, giving it a pleasant, gassy feel and a refreshing sweetness.

We want to create new history, cherishing the connections with the people Dewatsuru has met and will meet in the future. This commemorative sake was brewed with that thought in mind. It has a gorgeous aroma and an elegant taste with a well-balanced acidity from the kimoto brewing method.
